15g dried mixed mushrooms, covered in warm water to rehydrate

750g chestnut mushrooms, roughly chopped

25g Wyke unsalted butter

2 tbsp olive oil

1 large onion, finely diced

100g fresh breadcrumbs

150g extra mature Wyke Cheddar, coarsely grated

2 garlic cloves, crushed, or use 1 tsp JUX freeze-dried garlic

2 tsp JUX thyme

2 tsp JUX parsley

1 tsp Dijon mustard

1 tbsp Worcestershire sauce (use vegetarian if needed)

1 tsp Marmite

½ tsp freshly ground black pepper

¾ tsp fine sea salt

1 medium egg, beaten (plus extra for glazing)

2 x 320g sheets all-butter puff pastry

Sesame or poppy seeds (optional)

Method:
  1. Heat the oven to 220°C/200°C fan. Spread the fresh mushrooms over two large baking trays in a single layer and drizzle with 1 tablespoon of the olive oil. Roast for 30–35 minutes, stirring halfway, until the mushrooms have shrunk dramatically and all their moisture has evaporated. Leave to cool slightly.
  2. Meanwhile, heat the remaining tablespoon of olive oil in a frying pan and cook the onion with a pinch of salt over a medium heat for around 5 minutes, then chop the rehydrated mushrooms and add to the pan. Cook until everything is soft and lightly golden. Stir in the garlic for the final minute, then leave to cool.
  3. Tip the roasted mushrooms into a food processor and pulse until finely chopped but not completely smooth- you want a little texture.
  4. Transfer to a large bowl and mix in the cooked onion mixture, breadcrumbs, Cheddar, dried herbs, Dijon mustard, Worcestershire sauce, Marmite, pepper, salt and the beaten egg. Stir until everything is evenly combined. The mixture should hold together when squeezed in your hand. If it feels a little wet, add another handful of breadcrumbs.
  5. Chill the filling for 20 minutes.
  6. Reduce the oven temperature to 200°C/180°C fan. Line two baking trays with baking paper.
  7. Cut each sheet of puff pastry lengthways to make two long strips. Divide the filling into four equal portions and shape each into a long sausage down the centre of each strip.
  8. Brush one long edge with beaten egg, fold the pastry over the filling and press firmly to seal. Place seam-side down and cut each long roll into three pieces to make 12 sausage rolls.
  9. Transfer to the prepared trays. Brush generously with beaten egg, score the tops with a sharp knife and sprinkle with sesame or poppy seeds, if using.
  10. Bake for 25–30 minutes, until the pastry is deeply golden and crisp. Leave to cool for 10 minutes before serving.
